The Torah, Leviticus 23:6, commands us not to eat leaven for seven days.
With the exception of the first day of the Festival there is no obligation to eat “bread” at all. However, the Torah is commanding us that for the entirety of the Festival of Passover it is forbidden to eat any leaven food at all, including bread. Because of the severity of the prohibition against eating leaven on Passover, if bread is going to be eaten it has to be a special bread that is called Matzah, and it has to be produced in a very specific way – that precludes any other bread except for Matzah.
