Do any poskim allow chitosan in wine because it is changed forms from the non kosher seafood and bittul

    The following is taken from the Star-K site (www.star-k.org):

    Halacha states that a product derived from non-kosher material is also non-kosher. Hence, glucosamine, chitosan, and chitin, which are currently derived exclusively from non-kosher seafood derivatives, are non-kosher.
