I assume by “human composting” you are referring to human feces. if so, the answer is no. Human feces cannot be eaten and a person who does eat it violates a Torah prohibition.

I mean composting of the human corpse, which is legal in a couple of US states now.
Please excuse me for the misunderstanding. No, human composting is completely forbidden according to Jewish Law. A basis of Jewish faith is that the body is held on deposit, and together with the soul, it really belongs to God. He decides when and where man should die, and He decides what to do with the body once it has fulfilled this worldly purpose.
