It is permissible for him to do so but I can’t think of any reason why the Kohen would want to. It does not remove the obligation (which is a complicated issue nowadays), if there is one, for the Shochet (or the owner) of the animal to give the parts to a Kohen so it does not assist the Shochet. If the Kohen is adamant that he doe snot want it they should be given to another Kohen or, if the original Kohen has been given the parts in his absence, he can sell them back for a nominal sum to the Shochet.
